Tahchin Morgh Recipe That You Need to Try

Making a delicious and healthy recipe is every chef’s goal—anyone who loves to cook wishes to cook new and healthy recipes for their loved ones. Last week, while exploring new dishes, I came across Tahchin Morgh, a delicious and healthy Persian recipe by Shahram Kyani. The recipe was so attractive that I planned to cook it for my family. You know what? It was so yummy and comforting that my entire family loved it.

What is Tahchin?

Tahchin is a famous Persian recipe that layers rice with yogurt-marinated chicken and is cooked in the oven with a butter drizzle. When you take it out from the oven, the rice gets inverted onto a platter. The top layer gets golden brown, crunchy, and an addictive part of every bite.

An essential factor that needs to be considered while preparing this recipe is the type of casserole you will be using. If you are using a ceramic casserole dish, it might take a long time for the rice to form a crispy crust.

Contrarily, if you use a cast-iron Dutch oven, the crust might be perfect, but you might have to grease the pan properly to prevent sticking.

Usually, Tahchin, when cooked, has four layers;

  • The bottom layer is a mixture of basmati rice, egg, saffron, and yogurt
  • The next layer is of aromatic basmati rice and Persian rice spice
  • The third layer is of flavorful and tender pieces of cooked chicken
  • The final layer is more basmati rice sprinkled with a rice spice

To make the dish even tastier, cold butter is added on the top, which melts into the rice when it bakes in the oven.

Shahram Kyani’s Tahchin Recipe

Now without any further delay, let’s get into the recipe and find out the method to prepare this delicious recipe from the comfort of your home.

Ingredients

For the Chicken

  • Skinless chicken, thighs or drumsticks (3 ½ – 4 pounds)
  • Salt (3/4 tsp)
  • Ground black pepper (3/4 tsp)
  • Onion (1, peeled and cut into pieces)
  • Coldwater (1 ½ cups)

For the Rice

  • Uncooked basmati rice (4 cups)
  • Plain low-fat yogurt (1 cup)
  • Egg (1)
  • Saffron powder (1/8 tsp)
  • Vegetable oil (6 tbsp)
  • Butter (5 tbsp)
  • Persian rice spice (1 tsp)
  • Cold butter (3 tbsp)

Instructions

To Cook the chicken

  1. Take a stockpot with a good lid and add skinless chicken pieces in it. Add pepper, salt, onion, and 1 ½ cup of water in it. Let it boil. Reduce the heat to medium-low and cook for about 90 minutes.
  2. When the chicken falls apart easily with a fork, please remove it from the stockpot and allow it to cool for a few minutes.
  3. Turn the heat off. Pour the remaining broth (should be 1 cup, otherwise boil it for 3-5 minutes until it gets reduced to 1 cup) in a bowl. Smash the cooked onions using a fork and set aside.
  4. When the chicken is cool to handle, take the meat off the bone. Mix this meat with the broth until coated well. Chill the meat and broth mixture in a refrigerator for about 30-40 minutes.

To Make the Rice

  • Partially cook the rice using 4 cups of basmati rice and set them aside

To Make Tahchin

  • Preheat the oven to 400-degree F
  • Take a medium bowl and whisk together one egg, 1 tbsp vegetable oil, 1 cup yogurt, and saffron. Stir in 2 cups of partially cooked rice using a rubber spatula and mix until the rice gets coated. Place aside.
  • Take a baking dish (9x13x2 inch) and add 5 tbsp vegetable oil and 5 tbsp butter in it. Place this dish in a preheated oven for 3-5 minutes. When the butter melts or starts sizzling, transfer the baking dish to a heatproof surface using mittens.
  • First Layer

Add rice and yogurt mixture in the baking dish and spread evenly to cover the dish’s bottom.

  • Second Layer

Spread half of the remaining rice on the top of the yogurt mixture

  • Third Layer

Stir the chilled chicken and broth finely. Arrange evenly on top to cover the entire rice layer.

  • Fourth Layer

Add the remaining rice on top of the chicken and press gently with your hand.

  • Place cold butter cubes on the rice layer, maintaining equal distance from each other.
  • Take a sheet of heavy-duty aluminum foil and cover the entire baking dish with it.
  • Bake it in a preheated oven for about 1 hour and 15 minutes. Do not overbake. As soon as the lowest portion gets golden brown, stop baking.
  • Take out the baking dish from the oven and remove the aluminum foil. Release the Tahchin using a knife along the sides of the baking dish.
  • Use the knife to cut Tahchin into eight equal pieces. Your delicious Tahchin is ready to serve.
