This dish is usually prepared by adding egg mixture (eggs and parmesan) to pasta. The hot spaghetti cooks the egg resulting in a rich, creamy spaghetti alla carbonara.

One of my favorite meals for ages! My kids are crazy for this meal and always ask me to prepare this over the weekends.

Pecorino Romano is traditionally used to prepare spaghetti carbonara. However, you can substitute parmesan for Pecorino Romano.

Ingredients

  • 12 oz. spaghetti
  • Kosher salt
  • 3 large eggs
  • 1 c. freshly grated Parmesan
  • 8 slices bacon
  • 2 cloves garlic, minced
  • Freshly ground black pepper

For Garnish

  • Extra-virgin olive oil
  • Flaky sea salt
  • Freshly parsley (chopped)

Instructions

  1. Boil water in a largecooking pot add salt, add spaghetti in salted water, and cook as per instructions written on the package until al dente. Reserve 1 cup of pasta water for later use.
  2. In a mixing bowl, stir together eggs and parmesan until combined well.
  3. Place a large skillet and cook bacon over medium heat until crispy for about 8 minutes. Reserve bacon fat in the pan and remove slices to a plate lined with a paper towel to drain excess oil.
  4. Use the same skillet and saute garlic for 1 minute or until fragrant. Now add boiled spaghetti and toss until thoroughly covered in bacon fat. Remove the skillet from heat.
  5. Add egg and cheese mixture and mix continuously until creamy (be careful not to scramble eggs). The eggs will be cooked in pasta heat. Add a few tablespoons of leftover pasta water a couple of times to get creamy spaghetti sauce if necessary.
  6. Now add seasoning (salt and pepper) and bacon and mix it well. Add olive oil and garnish with flaky sea salt, parmesan, and choped parsley before serving.
